Weekday Healthy Family Meal

Healthy Family Recipe - During the hectic work week, one of the challenges for me as a former Sous Chef, now a work from home Dad and Husband, was creating a healthy but quick meal with a limited timeframe for my family. I wanted my family to benefit from a healthy but good tasting meal. But unfortunately, the struggle is real and time is limited during the weekdays. So I had to reimagine what a weekday family meal should look and taste like, being realistic with time and being on a budget.


I ended up learning to take some meaningful short cuts such as utilizing, at times, frozen food items as long as it's healthy, example, Amy's Kitchen, organic brand of food, see recipe/story below. Another strategy was to keep it fun and simple. I will share more weekday healthy family meals in the near future that includes making breakfast for dinner too. What kid doesn't want blueberry pancakes for dinner? Not many children would turn this down, especially if you put them to work and ask them to help you make them and cook them. It really gets fun on a weekday evening. Just make sure you have your cleaning solution on standby and maybe your favorite glass of red vino chilled for after dinner, to help you unwind and for your own self-wellness. Bon Appetit.
